Ingredients
  

  • 1 lb boneless, skinless chicken thighs or breast, cut into chunks
  • 1 cup plain yogurt
  • 2 tbsp lemon juice
  • 2 tbsp ginger-garlic paste
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp garam masala
  • 1 tsp turmeric
  • 1/2 tsp Salt and pepper, to taste
  • 2 tbsp ghee or oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 tbsp ginger, grated
  • 2 cups tomatoes, finely chopped
  • 1 cup heavy cream or coconut milk
  • 2 tbsp tomato paste
  • 1/2 cup Fresh cilantro or mint leaves, for garnish

Instructions
 

  • In a large bowl, mix together the yogurt, lemon juice, ginger-garlic paste, cumin, coriander, garam masala, turmeric, salt, and pepper.
  • Add the chicken to the bowl and toss to coat well. Cover and refrigerate for at least 2 hours, or overnight.
  • Preheat the oven to 425 degrees F (220 degrees C). Arrange the marinated chicken on a baking sheet and cook for 10-15 minutes, or until the chicken is cooked through.
  • In a large pan, heat the ghee or oil over medium heat. Add the onions, garlic, and ginger and sauté until the onions are translucent.
  • Add the tomatoes, cream or coconut milk, tomato paste, salt and pepper, and stir well. Bring the mixture to a boil and then reduce the heat to low and simmer for 10 minutes.
  • Add the cooked chicken to the pan and toss to coat well in the sauce.
  • Cook for an additional 5-10 minutes or until the chicken is heated through and the sauce has thickened.
  • Garnish with fresh cilantro or mint leaves and serve with rice or naan bread.
